Tasting Notes: Aromas of intense Blackberry and mulberry overshadow supple toasty oak. Varietal characters shine through on the palate displaying concentrated cassis (blackcurrant) and freshly chopped mint. The wine is elegant and perfectly balanced with a combination of rich berries, dusty oak and soft velvety tannins.

Winemakers Notes: Cooler weather conditions during the 2002 growing season were ideal for the production of cool climate Cabernet Sauvignon. The summer was very mild with an extended warm autumn providing an extended ripening period enabling intense concentration of varietal flavour. After harvesting in late April the grapes were destemmed, inoculated and fermented in half tonne open fermenters for 10 days. When fermentation was finished the must was gently basket pressed into and matured in a combination of French and American oak for 20+ months. During the aging process the wine is racked a number of times and bottled without any fining or filtration.
