Winemakers Notes: The 2004 vintage was slightly longer and cooler than the 2003, and was characterised by ample winter rain and cooler conditions during budburst. The summer was mild, warm and dry with an uncharacteristically cool January followed by a small heat wave in February; a long dry autumn provided perfect conditions to facilitate the faultless ripening of the fruit. After harvesting in late April the fruit was destemmed and chilled prior to inoculation and fermentation in half tonne open fermenters for 10 days. After fermentation was finished the must was allowed to undergo maceration on skins for 1 week prior to being gently basket pressed into a combination of French and American oak where it was aged for 18 months. During the aging process the wine is racked a number of times and bottled without any fining or filtration.
