It is widely believed to produce the finest red wines in Portugal. Vintage Notes:In 2015 we experienced an exceptional long ripening period which meant that we were able to produce a fuller style of wine, whereas 2016, 2017 and 2018, being cooler, enabled us to produce an more austere style of wine with considerable ageing potential. 2018 in particular has been the best vintage that we have experienced since 2002. In all of these years the ripening period was very mild and this was very conducive to the production of intense varietal characters which are clearly expressed in these wines. The timing for the harvesting of these grapes as we get close to harvest is determined through a very intensive sampling program and monitoring of sugar development and flavour characters. The importance of flavour development monitoring in the vineyard through the ripening period is crucial in ensuring that the grapes are harvested at the optimal time.
Winemaking Notes:The grapes are destemmed following harvest and inoculated with a yeast strain that is chosen to enhance the varietal characters of the fruit. Half of the Pinot Noir is not inoculated with yeast but allowed to ferment with naturally occurring yeast. This results in the formation of unique characters that are evident in this wine; developed, complex truffle, game and earthy characters typical of those found in great Burgundian Pinot Noirs. The wines were fermented for 10-14 days with strict temperature control in order to retain the varietal and fermentation characters. Following fermentation the wines were subjected to an extended maceration period on skins in a sealed tank under the cover of carbon dioxide for an additional two weeks. The must was then gently Basket Pressed into a combination of aged fine grain French and American Oak hogsheads where it was aged for 12 months. After carefully racking each barrel they were blending together and bottled each without any fining or filtration in order to retain maximum flavour and character.
