The wine was aged for six months in seasoned French oak, producing a complex, full bodied, highly perfumed wine. \u00a0Aromas of Lemongrass, Honeydew, Almonds and perfume.\u00a0 The palate displays Nashi Pears, Apricots, and glazed peaches to finish.<\/div><\/div><\/div>
Food Pairing:\u00a0 \u00a0 \u00a0<\/strong>This wine is best served chilled on its own or would perfectly pair with a chicken dish such as Thai green curry.<\/div><\/div><\/div>
Winemaking Notes:\u00a0 \u00a0 \u00a0<\/strong>Two and a half tons of Arneis fruit were harvested from the K1 Vineyard.\u00a0 It was destemmed without the crusher operating and sealed up in a stainless steel tank under a blanket of Co2 cover for a cold soak on skins for five days.\u00a0 This process enhances varietal character and makes for a wine with more texture and mouthfeel.\u00a0 It was then pressed into seasoned French oak, where it was fermented wild for 14 days. \u00a0After fermentation finished, it was maturated in seasoned French oak for 6 months, where lee\u2019s stirring was conducted three times a week.
