Winemakers Notes: Tempranillo is best known as the dominant grape of Rioja’s wines, Spain’s best known and most respected grape growing region. In the Adelaide Hills, it is known for producing superior wines with tight structures, complex aroma's and great ageing potential.
Three clones of Tempranillo were machine harvested separately, each parcel was cold soaked for 3 days, after which it was fermented in open fermenters and plunged three times daily. It was basket pressed into 3-4-year-old French Hogsheads, where it was aged for 12 months.
In order to create a superior complex varietal Tempranillo, a blending trial was conducted. With the three clones blended together in a 40-20-40 mix. This wine was then bottled without any fining or filtration to retain maximum character and flavour.
