This variety always ages gracefully and the longest in my opinion from our vineyard.\u00a0 Aroma's of cherries, cranberries, raspberry and cedar oak.\u00a0 Leading into a palate that is rich, rounded and full of pomegranite, santa rosa plums and grippy tannins to finish.\n\n <\/div><\/div>
Food Matches:\u00a0<\/strong> This wine is best served as an aperitif or alternatively would perfectly accompany a variety of Steak and Lamb dishes.<\/div><\/div>
Winemaking Notes:<\/strong>\u00a0 After harvesting in late April, the fruit was destemmed and chilled prior to inoculation and fermentation in half-ton open fermenters for 14 days at slightly lower temperatures to retain maximum aromatics and varietal flavours.\u00a0 After fermentation was finished, the must was gently basket pressed into French oak, where it was aged for 12 months.\u00a0 During the aging process, the wine is racked three times and bottled without any fining or filtration.<\/div><\/div>
