Tasting Notes: The Art Series Pet Nat is vinified from a mixture of 85% Dolcetto and 15% Pinot Grigio blended to produce a highly aromatic and delicate sparkling wine. Displaying a combination of strawberries, raspberries, tropical fruits, and a little spice to finish.
Food Pairing: This wine is best served as an aperitif or would perfectly accompany an assortment of soft cheeses, with my favourite being Udder Delights Triple Cream Brie.
Winemaking Notes: 2.5 tonnes of Dolcetto and 1/2 a tonne of Pinot Grigio were hand-selected and blended together, after it was destemmed and then delicately pressed before being sent to tank to settle for 48 hours. After this period, it was racked and warmed to 14 degrees to naturally start fermenting using wild yeast. At exactly the right time, fermentation was stopped by chilling to just above freezing, leaving the appropriate levels of residual sugar to conduct secondary fermentation in bottle when needed. The partially fermented Pet Nat was then disgorged into a bottle and sealed with a crown seal. This was then left for around a month to warm and finish secondary fermentation, creating the Co2 (bubbles) before being labelled and released.
The artwork has been created and designed in collaboration with Todd Engelsma as a fun depiction of the New Era Vineyards Pfeiffer Rd property at Woodside and the flora and fauna that share the land with us.
