Barrel Select Pinot Noir 2024

Tasting Notes:  Ripe cherries, raspberry tart, and fleshy pomegranate combine with dusty French Oak and freshly shaved pencils waft into the nostrils.  Dark red fruits, spice and freshly dried herbs mix with leather saddle are balanced with concentrated but balanced drying tannins and a long satisfying finish.

Food Pairing:  This wine is best served as an aperitif or would perfectly accompany a variety of duck, veal, and game dishes.  
Winemaking Notes:  A combination of clones 114, 115, d4v2, MV6 and 777 was harvested, and 90% were destemmed and chilled before conducting a cold soak for 5 days.   During this cold soak, the grapes were allowed to start fermenting naturally to gain complexity before inoculation and fermented in 2 tonne open fermenters with hand plunging 3 times daily.  After fermentation was complete, the must was directly basket pressed into French oak where it was then aged for 12 months and bottled without any fining or filtration.  Vegan Friendly.
