Winemakers Notes: Montepulciano is a red Italian grape that is widely planted in central and Southern Italy. Over recent years, Australian winemakers have seen the varieties’ ability to thrive in the Australian climate and especially in the cooler region of SA. It is a late ripening variety that produces deeply coloured wines due to the low skin to juice ratio and a large amount of pigmented tannins.
After a gentle crushing and destemming the grape must was transferred to 1 ton open fermenters, it was then inoculated with Consorizo Del Vino Brunello di Montalcino BM45 yeast and hand plunged three times daily for 10 days. After which it was pressed into seasoned French Oak hogsheads for 12 months. It was carefully racked from barrel and bottled without any fining or filtration.
